It’s all about the choice of kitchen equipment
Two of our favourite Oven brands are Josper and Mibrasa are ovens that are manufactured in Spain, within the Barcelona region. It’s important to note that function without gas, which means that they work with air flow. What’s more, both work with a special type of imported charcoal and good quality wood. Generally, the best ratio is 2kgs of wood to 20kgs charcoal, then if a smokier flavour is desired, more wood is added.
