And because we incessantly receive rave reviews from our loyal clientele, we thought it was only fair to let you in on a couple of little secrets by disclosing a tiny proportion of what goes on in our legendary kitchens.

As discussed in one of our previous blogs, Sciacca is dead set on producing dishes that are of elevated taste and texture. Therefore, when we invested in our restaurants, we also wanted to supply our highly-skilled chefs with high-end equipment that would enhance the star of each dish. When cooking any type of food, one of the first appliances that come to mind is the trusty oven, because after all, everyone needs a reliable oven in their kitchen. This couldn’t ring truer for the Sciacca kitchens, and we will be explaining why….

It’s all about the choice of kitchen equipment

Two of our favourite Oven brands are Josper and Mibrasa are ovens that are manufactured in Spain, within the Barcelona region. It’s important to note that function without gas, which means that they work with air flow. What’s more, both work with a special type of imported charcoal and good quality wood. Of course, we don’t stop there. We even go that extra mile to import a variety of wood: be it almond, cherry, or ash.

Needless to say, it’s not as simple as just adding charcoal and wood to the oven, our chefs make sure to find the perfect balance, so the meat doesn’t end up taking on a woody flavour. Generally, the best ratio is 2kgs of wood to 20kgs charcoal, then if a smokier flavour is desired, more wood is added. A noteworthy feature of these ovens is that food isn’t cooked on an open flame, which means that the meat doesn’t carbonize, which ultimately dries and toughens it.

What’s the difference between Josper and Mibrasa?

Choosing between a Josper and Mibrasa oven is like trying to choose between a Rolls Royce and a Bentley: it’s virtually impossible, because both have their own merits and are equally good quality.
